Delicious Biscuits Vanilla Cream Cake


What can I say ..

What's better than waking up in the morning for a good cup of coffee and a delicious cake like this one?

One of the cakes I loved the most as a child and one of the cakes I love the most even as an adult.

Delicious, satisfying and soooo easy to make !!!


Layers of biscuits dipped in coffee, maybe today I like to dip them in coffee stronger than I used to as a child.. 😊

Between the biscuit layers there's a dreamy vanilla cream and a generous layer of chocolate sauce on top.

Who needs more than that?

seriously!

Maybe the easiest cake to make and the most satisfying to eat.



Ingredients:

For the cake -

  • 400-450 grams of biscuits

  • 200 ml 15% sour cream

  • 250 ml whipping cream

  • 200 grams of cream cheese

  • 200 grams of condensed milk

  • 4 tablespoons instant vanilla pudding powder

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • Cup of coffee [4 teaspoons of coffee on a glass of boiling water] *

  • 2 tablespoons rum [optional]

For the chocolate sauce -

  • 150 grams of dark chocolate

  • 120 ml whipping cream

  • 30 grams of butter

  • 2 tablespoons of sugar

  • 2 tablespoons coffee powder [optional]

  • Pinch of salt

*The coffee for dipping the biscuits in can be made stronger or weaker according to taste


Prep:

  • Start by making the vanilla cream, whisk the cream cheese in the mixer bowl for about 2 minutes to open it up a bit.

  • Add the sour cream and continue to whisk.

  • Add the whipping cream and vanilla pudding and whisk on medium speed.

  • Once a firm cream begins to form add the condensed milk and a pinch of salt.

  • Beat for 2-3 minutes on higher speed until a firm and airy cream is obtained.

  • Prepare the coffee in which we will dip the biscuits and add 1 teaspoon of vanilla extract and 2 tablespoons of rum.

  • Dip each biscuit in the coffee and arrange in a rectangular pan a layer of biscuits.

  • Spread over a quarter of the vanilla cream and arrange another layer of biscuits.

  • Repeat until you get 4 layers of biscuits and 4 layers of cream.

  • Cover the pan and refrigerate.

  • Prepare the chocolate sauce - Melt all the ingredients together in a bain marie or in short pulses in the microwave [10 seconds at a time] until you get a smooth chocolate sauce.

  • Remove the cake from the refrigerator and pour over the chocolate sauce and return to the refrigerator for at least 30 min before eating.
