Dreamy almond cookies, without flour - so they are also great for Passover and for those who are sensitive/avoiding gluten.
But regardless of gluten or non-gluten, those cookies are super delicious and so easy to make!
To be honest, after I make pasta from yolk dough I always stay with a fair amount of egg whites. So instead of throwing it, I make Amaretti cookies!
Soft and moist on the inside, crisp on the outside and on these winter days... it goes so well with some hot tea :)
Ingredients:
400 grams of ground almonds
5 egg whites
230 grams of sugar
Half a teaspoon of vanilla extract
3 tablespoons amaretto liqueur / tablespoon almond extract
A tablespoon of honey
Lemon zest from one lemon
Pinch of salt
100 grams of powdered sugar
Prep:
Preheat oven to 180 °.
Whisk the egg whites with a tablespoon of honey and a pinch of salt until stiff peaks form. And set aside.
In another bowl mix the ground almonds with the rest of the ingredients, mix with your hands to spread the lemon zest, vanilla and liqueur evenly.
Transfer a third the amount of the almond mixture to the beaten egg whites and fold in.
Then add another third and fold in.
Then the rest of the mixture, add and fold until incorporated.
Create small balls, roll it in powdered sugar, mash lightly and place in a pan lined with baking paper.
Place in the oven for 10-15 minutes until golden.
