So like every other week, I said to myself - 'Mor! Cook something healthy today, something low in calories and you better put some lettuce in it! '
Because you know ... whoever follows me long enough knows what I usually cook and bake, I have no guilt feelings but I need some balance from time to time!
So I made a salad that is not exactly low in calories.
And I enjoyed every bite!
Caesar salad with rich sauce, spiced chickpeas, croutons that I made from yesterday's bread and a soft-boiled egg.
Delicious delicious delicious.
Please note - I made a salad just for myself. So the quantities are for one person.. if you're having company - double or triple!

Ingredients:
For the salad-
10-20 lettuce leaves
30 grams of grated parmesan
1 soft boiled egg
For the chickpeas topping-
Half a cup of soaked and cooked chickpeas
Pinch of salt
A pinch of black pepper
A quarter teaspoon of sweet / spicy paprika
A quarter teaspoon of chili (optional)
A tablespoon of oil
Sauce-
1 tablespoon mayonnaise
1 flat teaspoon Dijon mustard
2 tablespoons olive oil
1 teaspoon of white wine vinegar
20 grams of parmesan
1 anchovy fillet (you can also add two if you like)
1 teaspoon capers
A pinch of black pepper
1 clove of garlic
For the croutons-
A slice or two of bread
Olive oil
Coarse salt
Prep:
Prepare the croutons: Cut the bread into 2-3 cm cubes, place in a pan and drizzle with a little olive oil and coarse salt. Place in a preheated oven at 180 degrees for 8-12 minutes until golden.
Cook the egg - Boil water with a little salt in a small pot and add the egg when the water has come to a boil. Please note - it is important that the egg is at room temperature and not cold from the refrigerator, otherwise it will explode in the water due to the temperature differences. Set a timer for 6 minutes and transfer the egg to cold water, to get a hard-boiled egg that the yolk is liquids.
Prepare the sauce: Grind all the ingredients together in a blender or small food processor.
Chickpeas: Heat a teaspoon of oil with a pinch of salt, a pinch of black pepper and a quarter of a teaspoon of paprika. Roast the chickpeas for 2-3 minutes and turn off the heat.
Wash the lettuce leaves, dry and cut into strips.
And now it's time to put all the ingredients together!
In a bowl, mix the lettuce with the sauce until the sauce wraps all the lettuce.
Add the chickpeas, croutons, grated Parmesan cheese.
Peel and cut the egg in half and place on top of your salad!
