So this is not some fancy cake, or one that would have caught my eye if I had walked into a bakery.
This is a really simple cake that is easy to make and it's so good!
After a period of time that every weekend I was making some kind of babka , cream cakes, incredibly complex tarts and making a lot of mess in my little Tel Avivan kitchen. when your kitchen is so tiny it's getting messy pretty quickly.
I felt like making a simple simple simple cake.
And that's the result.
I had tried something similar in the past on one of my trips abroad and wanted to try to make it.
This cake has a million and one versions, all of which are super easy to make.
Semolina and sour cream cake with shredded coconut and some lemon zest, at the end of baking I dripped over the cake while it's still hot hot a syrup I made of milk, vanilla and sugar.
The syrup can also be seasoned, You can cook it with citrus peels, cloves or cinnamon. Or even cook the syrup with Earl Gray tea [in moderation of course]
I encourage everyone to take an idea and go wild with it.

Ingredients:
For the cake-
4 eggs
200 grams of sugar
65 grams of flour
250 grams of semolina
70 grams of coconut [and a little more to sprinkle on top of the cake]
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
Half a flat teaspoon of salt
250 ml whipping cream
200 ml sour cream
50 ml of milk
Lemon zest from whole lemon [optional]
Syrup-
200 ml of milk
100 ml sugar
1 teaspoon vanilla puree [possible to use extract]
Prep:
Preheat the oven to 180 degrees [C].
In the mixer bowl, beat the eggs with the sugar until you get a light and fluffy mixture.
Add all the other ingredients and mix well.
Transfer to a lightly greased pan. [Round - diameter of 26 or rectangular 20x30, more or less]
Bake for 25-30 minutes.
While the cake is in the oven, prepare the syrup - heat all the ingredients in a small pot and mix until the sugar is completely dissolved.
When the cake comes out of the oven, spread the syrup evenly over it and sprinkle over shredded coconut.
