Pasta in almonds pesto - tasty, quick and easy!



Did I mention I LOVE pasta already?

Don't know if there is a dish I like more!

And what do I like even better? A delicious pasta dish that I can make in 12 minutes!

Pasta in pesto cream is dreamy and it's so easy to make.


Now, I'll go back a lil bit and I'll be honest .. Not Long ago I made pesto cream pasta for my friends. And it did not turn out the best or as I at least wanted. My friends did like the result. But for me.. if it's not coming out as I want it really bothers me. Especially when it's an easy recipe. So..last week I woke up in the morning with an urge to make pesto pasta again and it turned out just the way I like!

I used almonds for the pesto sauce because that's what I had at home. And I'm going to embrace this recipe forever😅.


To keep things short, let's move to the recipe.

I do not want this post to take longer to read than it takes to make the pasta.


Ingredients:

  • 250g spaghetti or whatever type of pasta you want [half a pack]

  • 20 grams of butter

For the pesto-

  • Half a bunch of basil [leaves only]

  • 30 grams of Parmesan / Pecorino cheese

  • 40 grams of peeled almonds

  • 2 tablespoons bread crumbs

  • 8-10 tablespoons olive oil

  • 2 cloves garlic

  • Half a teaspoon of Atlantic / Himalayan sea salt

  • Half a teaspoon of white wine vinegar

  • 1 ice cube


Prep:

  • Boil water in a large pot.

  • When the water almost comes to a boil add a teaspoon of salt.

  • And when the water is boiling add the pasta and cook it for a minute less than the time listed on the package.

  • Stir the pasta occasionally.

  • While the pasta is cooking, prepare the pesto - grind all the ingredients in a blender until you get a uniform spread.. If the pesto is too thick you can add a teaspoon of cold water.

  • About a minute before the pasta is ready heat on a pan a small cube of butter and add 3 tablespoons of the pesto and mix. [You can add more pesto to suit your taste]

  • I keep the remaining pesto in a jar in the fridge and it lasts up to a week.

  • When the pasta is ready transfer it to the pan with the pesto and add some of the water of the pasta.

  • Stir for about a minute until a cream is formed that nicely wraps all the pasta.


And this is it...A stunning dish in no time!
