What do you call it? Mayonnaise salad or potato salad in mayonnaise?
When I was younger, a kidd .. I really did not like mayonnaise salad even without tasting it. It seemed very strange to me and I did not understand the combination.
Not sure where along the way I decided to give this weird thing a try, and what do you know... I've changed my mind!
These days I really like potato salad in mayonnaise.
And I also like to do different versions of it from time to time, this one came out really successful in my opinion.
Potato salad in mayonnaise and mustard sauce with pieces of roasted salmon, capers, gherkins, scallions, purple onions and pickled pearl onions.

Ingredients -
1 fillet of salmon
3 medium potatoes
1 tablespoon capers
1 tablespoon pickled pearl onions
2 green onion stalks
Half a small purple onion
5 gherkins (or 2-3 small pickles)
For sauces -
1 teaspoon Dijon mustard with seeds
1 teaspoon smooth mustard
1 teaspoon honey
3 tablespoons olive oil
1 clove of garlic, crushed
Half a teaspoon of salt
A pinch of black pepper
2 tablespoons mayonnaise (recipe for homemade mayonnaise - here)
2-3 tablespoons freshly squeezed lemon juice / white wine vinegar
Prep:
Cook the potatoes in water with salt until soft. Cool and cut into cubes.
Prepare the marinade for the salmon, mix the mustard, honey, olive oil, crushed garlic, salt and black pepper.
Set aside 3 teaspoons of the marinade to serve as a base for the mayonnaise sauce for the salad itself.
Spread the rest of the marinade on the salmon fillet and place in a preheated oven at 180 degrees, for 10-12 minutes.
Meanwhile, take care of the rest of the salad ingredients - cut the gherkins into slices, the pearl onions into halves, if the capers are small there is no need to cut, the purple onion cut into very thin strips and the green onion cut into thin rings.
Prepare the sauce for the salad - add to the marinade we kept aside two tablespoons of mayonnaise, 2-3 tablespoons of squeezed lemon juice, a pinch of salt and a pinch of black pepper and mix well.
In a bowl, mix the diced potatoes with the rest of the ingredients and the sauce.
When the salmon is ready, allow it to cool for a bit and then unpack it into small flakes with your hands or a fork and place it on top of the salad.
