Who said vegan isn't tasty ?!
After eating all of those fried doughnuts this Hanukkah, I to make make a slightly more lighter doughnuts with a little less guilt :)
(Who am I kidding ... no guilt feelings at all! Hanukkah is not the holiday to count calories)
So I made some vegan baked doughnuts and I have to say it turned out pretty nice.
Ingredients:
For the doughnuts-
75g all-purpose flour
85g spelled flour
35g cocoa
60 g brown sugar
220ml soy milk (or any other vegan milk)
40ml canola oil
1 teaspoon of vanilla extract
1 teaspoon baking powder
Half a teaspoon of baking soda
Half a teaspoon of salt
1 Teaspoon apple cider vinegar
For topping-
200g of dark chocolate
30g of vegan butter
1 tablespoon of sugar
2 tablespoons soy milk
Grounded coconut
Preparation:
Mix all the ingredients in a stand mixer.
We put donut-shaped baking tray and pour the batter into it.
Place in a preheated oven at 175 degrees Celsius.
Baking time: 10-12 minutes.
In a small saucepan over low heat, melt the chocolate together with the sugar, vegan butter and soy milk and mix well until smooth.
Dip the donut in the chocolate and then in the coconut.
