I woke up with a craving for cabbage stuffed with rice in tomato sauce.
But I also woke up without the will to work hard and prepare it.
So I decided to go along with my laziness and instead of making stuffed cabbage I made a stew with arborio rice, white cabbage, tomatoes and lemon.
The result was exactly what I wanted, minimum work and maximum flavors that matched my desires.
The stew can be used as an addition to some meat dish, or you can even add beef to the stew and make it the main course, I just ate it as is with some sour cream and scallions.
I really like to adding sour cream and scallions to all kinds of things. It makes everything better :)

If you woke up lazy like I did and you want an easy and quick meal - keep reading!
Ingredients:
Half a small-medium white cabbage
3-4 mashed tomatoes / can of mashed tomatoes [I really like using Mutti's]
3 tablespoons tomato paste
One large lemon
Two teaspoons of apricot jam / apple jam / dates honey
A cup and a half of Arborio rice
1 chopped onion
3 cloves of garlic
Salt
Ground black pepper
3 glasses of hot water
Olive oil
300 grams ground beef [optional]
Preparation:
Heat olive oil in a pot.
Add half a teaspoon of black pepper, half a teaspoon of salt, crushed garlic and chopped onion. Mix.
Cut the cabbage into thick strips, add to the pot and lightly fry.
If you want to add meat, add it along with the cabbage.
Lower the heat to a low flame and stir.
After 2-3 minutes add the rice and mix.
Add squeezed lemon, crushed tomatoes, the jam and tomato paste. And some more salt and pepper to suit your taste.
Add 3 cups of boiling water, mix well, close the pot and cook for 30-35 minutes on a low flame.
