Delicious tomato sauce!


So anyone who has known me or followed me long enough knows that Tomatoes and I are not friends.

Well... not exactly true.

I love tomatoes, but on my own terms! If you know what I mean.

(You probably don't)

For example ... there is no chance that I will eat tomatoes in their natural form.

I know, weird .. right? :)

Anyways,

Pasta in tomato sauce, a really smooth tomato sauce that has been cooked for a long time - one of my favorite dishes of all times.

The most delicious, simple and yummy.


In my opinion a good tomato sauce does not need too many spices or ingredients,

The beauty of which is in its simplicity. And most importantly? Good tomatoes and long cooking time.

By the way, this is not just a sauce for pasta. I use it in pastries like pizzas, etc. Sometimes, I cook meatballs in it and more ...




Ingredients:

  • 6 medium to large ripe tomatoes

  • 8 basil leaves

  • 3 cloves of garlic

  • Bottle of Passata (Italian tomato puree)

  • Sea salt

  • Ground black pepper

  • Olive oil

  • Half a teaspoon of chopped dry chili [optional - for a slightly spicy sauce]


Prep:

  • Cook the whole tomatoes in boiling water for 20-30 minutes.

  • Transfer the cooked tomatoes to a bowl with cold water.

  • Peel and cut the tomatoes into quarters.

  • Heat olive oil in a saucepan and add the garlic cut in half, salt and pepper to suit your taste.

  • At this point, if you want the sauce to be a little spicy - add half a teaspoon of chili.

  • Transfer the tomatoes to a saucepan and add the basil leaves.

  • Continue to cook for about 40 minutes on medium-low heat.

  • Remove the basil leaves and grind the tomatoes with a hand blender or in a regular blender until smooth.

  • Add a bottle of passata, stir and continue to cook on low heat for at least another 20 minutes.


And this is it, the simplest and most delicious tomato sauce. :)
