Spaghetti with lemon mascarpone cream, topped with toasted and spiced bread crumbs

What's more fun than a dish that takes less than 20 minutes to make and is also insanely delicious?

Spaghetti in mascarpone cream with lemon zest and topped with toasted bread crumbs with basil and garlic.

I love this combination, the toasted bread crumbs add more texture and flavor to the spaghetti that is wrapped in a delicious mascarpone and lemon cream.

Ingredients:

  • 250 g spaghetti (half a pack)

  • 5 tablespoons mascarpone cheese

  • 2-3 tablespoons butter

  • 1 lemon, grated + juice

  • 3 cloves of garlic

  • 5 basil leaves

  • 4 tablespoons bread crumbs

  • Salt

  • Ground black pepper

  • 2 tablespoons olive oil

Preparation:

  • Boil water in a pot to cook the pasta and add 2-3 tablespoons of salt to the water.

  • Chop the basil leaves finely.

  • On a pan, heat 2 tablespoons of olive oil and add the chopped basil, a clove of crushed garlic, a pinch of salt, a pinch of black pepper and the bread crumbs.

  • Mix the bread crumbs on the pan for about 2 minutes until they are slightly browned. It is important to mix constantly so that some of the bread crumbs do not burn. Transfer to a bowl and put a side.

  • When the pasta water boils, put the pasta in. Set a timer for the cooking time - 2 minutes less than the cooking time indicated on the package. It will continue to cook in mascarpone cream after.

  • While the pasta is cooking, heat another pan, large enough to contain the entire amount of the pasta. You can also use a pot, if it's more convenient to you.

  • Heat 2-3 tablespoons of butter on the pan.

  • Add half a teaspoon of black pepper, half a teaspoon of salt (even a drop less), a lemon zest from a whole lemon and two cloves of crushed garlic. Stir well until the butter is completely melted.

  • Lower the flame.

  • Add the mascarpone cheese and mix.

  • Add the juice of one whole lemon and mix well.

  • When the pasta is almost cooked (2 minutes less than the cooking time on the package) keep a glass of pasta water on the side, strain the pasta and transfer to the pan with the mascarpone.

  • Add half a cup of pasta water and mix everything well. If the sauce is too thick add a little more pasta water.

  • Cook for another 2 minutes and the pasta is ready.

  • When serving, sprinkle with the toasted bread crumbs on top.
