"The lockdown refresher" Cocktail - tequila, honey, pineapple and thyme
So we're having a pretty difficult year,
It's been hard, but this year brought a lot of good things into my life and I just wonder when and if life will be back to normal.
On the one hand, I fell in love with home hangouts (or should I say hang-ins) with the people I love, there is something really fun, personal and intimate about it. And not spending a lot of money is nice as well if I can be honest ..
On the other hand, I really miss going out to restaurants and bars. I definitely hope to see all of businesses open very soon.
I decided that once a week I would try to make some yummy cocktail with things I have in my pantry and upgrade it with a fancy glasses and garnishes that maybe would make me feel a bit of a bar atmosphere at home.
So this cocktail 'The lockdown refresher' (I'm not good at choosing names..wish some luck to the kids I'll have one day) is based on tequila, with pineapple juice, squeezed lemon and honey and thyme syrup that I made and that anyone can make at home.
I served it in beautiful glasses with glass straws I ordered from AliExpress and with ice that I've put flowers my garden in it. I said bar atmosphere, right?!
Then I'll start with the recipe for thyme honey syrup:
300 ml of water
4 very generous tablespoons of honey
5 stalks of thyme
Put all the ingredients in a pot and cook over low heat for 20 minutes, leave the thyme in the syrup for at least another hour until it cools completely and then strain.
It can be stored in the refrigerator for about a week and a half.
And here's the cocktail recipe -
50 ml tequila
40 ml pineapple juice
30 ml squeezed lemon
30 ml thyme honey syrup
Pour all the ingredients into a shaker / jar, add ice, close and shake well!
Strain the cocktail into a glass and add ice and garnish with thyme.
